cherry anise lime soda syrup

Here is another foray into fresh fruit sodas, inspired by a cherry lime rickey. The star anise adds depth to the cherries and the lime adds tartness. This syrup also makes a beautiful magenta color.

Cherry Anise Lime Soda Syrup

Ingredients:

  • 2 cups black cherries, stemmed (but not pitted)
  • 1/2 cup white sugar
  • 1 cup water
  • 2 pieces of star anise
  • 2 limes
  • Soda water

Instructions:

  1. Wash and stem cherries. Put into a medium sauce pan.
  2. Add sugar, water and star anise.
  3. Bring to a boil and reduce to a simmer.
  4. Simmer until liquid has reduced to half a cup.
  5. Strain liquid into a mason jar. Let cool.
  6. Put ice into two tall glasses.
  7. Squeeze the juice of one lime into each glass.
  8. Put one shot of syrup into each glass.
  9. Top with soda water and stir.
  10. Enjoy!
